Mr. Kent rides the bus. And the train. And motorized scooters. And walks. He prefers to get around without a car whenever possible. He may have asked me out on a second date in part because I was willing to ride the bus and trolley— and do a lot of walking—on our first afternoon together. His penchant for being multimodal makes it possible for us to have only one car. As a practical matter, that reduces our expenses as well as our impact on the earth. Not only does this keep Mr. Kent happy, it also allows me a little extra money to support my organic vegetable and animal product preferences. It’s a win-win, and we all feel healthier because of it.
However, that doesn’t mean having one car is simple. It’s definitely not. But Mr. Kent also revels in complex transit plans. It’s not uncommon for me to pack up the kiddos to visit relatives a few days earlier than Mr. Kent so he can join us by plane, bus—or sometimes train! I like to leave dinners in the freezer for him so that he can avoid grazing. Not that he can’t cook, but cooking a meal for one—even heating something up—is harder when you’re just home from work and hungry. Unless you’re really prepared, it rarely ends without a lot of snacking, and then what’s the point of eating what you’ve made, especially if you’re eating alone?
These make-ahead English muffin mini pizzas are a great option—they’re simple to make and quick to reheat. These also make a great lunch or after-school snack.
Ingredients
- 6 English muffins
- 2 cloves garlic
- 1 cup marinara sauce
- ¼ cup olive oil
Toppings:
- ½ cup meats (pepperoni, cooked
sausage, bacon bits) - ¼ cup fruits (tomatoes, pineapple
chunks, olives) - ¼ cup caramelized onions
- ¼ cup pesto
- 2 cups shredded mozzarella
- ¼ cup grated Parmesan cheese
- Garlic salt
Step by Step Instructions
Step 1
6 English muffins
2 cloves garlic
1 cup marinara sauce
Preheat the oven broiler and place the rack 6 inches from the broiler. Split the muffins and place them on a half-sheet pan. Broil briefly while watching, until the tops are just crusty but not brown. Scrape the tops with the garlic. Allow the muffins to cool. Spread each muffin with about a tablespoon of marinara sauce.

½ cup meats (pepperoni, cooked
sausage, bacon bits)
¼ cup fruits (tomatoes, pineapple
chunks, olives)
¼ cup caramelized onions
¼ cup pesto
2 cups shredded mozzarella
¼ cup grated Parmesan cheese
Garlic salt
Add desired toppings to the pizzas. Kids like to decorate their own pizzas. Sprinkle each pizza with a bit of garlic salt. Freeze the pizzas on the baking sheet, then transfer them to a freezer container or bag after they’re frozen.
Step 3
¼ cup olive oil
To cook, preheat the oven to 400 degrees F. Drizzle each pizza with a teaspoon of olive oil. Bake the pizzas for 7–10 minutes, or until they’re hot and the cheese is toasty.
