Monday 1/29/24—Gluten free black bean and pepper jack quesadillas with freshly compounded salsa

This time of year I use canned diced tomatoes in lieu of fresh tomatoes, but they are really brightened up with fresh onion, cilantro, lime, and jalapeno! This is a good recipe to start with: Homemade Salsa With Canned Tomatoes (Quick & Easy!) (onelovelylife.com) except I don’t bother to blend the salsa—I keep it chunky, and I haven’t tried it with chipotle. To make this extra quick, I make it with canned black beans that I rinse. Make sure to use corn tortillas to make sure to keep it gluten free.

Tuesday 1/30/24—Gluten free Portuguese-style potato and kale soup

Wednesday 1/31/24—Gluten free creamy shrimp tacos

My sister in law introduced me to these wonderful tacos that are so nice and quick. If I make enough salsa on Monday, I will still have some today for the shrimp tacos! This is a simple recipe that I will try to post it because I can’t find one that is the same.

Thursday 2/1/24—Gluten free baked potato bar with chili and broccoli

This is a very easy dinner that is basically just baking potatoes and heating up some canned chili. You can steam the broccoli or roast it at 425-degrees with oil and salt, which is really good but pretty rich. I serve this with shredded cheddar cheese, butter, salt, and maybe some sliced green onions!

Friday 2/2/24—Pizza, green salad, and brownie sundaes

I am going to be out of town, so my family will enjoy a full-of-gluten Papa Murphy’s pizza with a green salad kit and my daughter will make brownies for sundaes. It sounds good to me, if I could eat it!

Saturday 2/3/24—Refrigerator dinner.

Sunday 2/4/24—Gluten free omelet, toast, and green salad
