What is a S’moreos

These cookies are crisp on the edges and unctuous in the middle and they are the perfect foil for a slightly charred marshmallow on a summer evening!

Ingredients

  • 1 cup/142 grams all-purpose flour
  • 1 cup/142 grams whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup butter, slightly softened
  • 2/3 cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 Tablespoons honey
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup smooth peanut butter (like Jif)
  • 1 cup chocolate chips
  • 1 ½ cups peanut butter chips
  • Regular sized marshmallows

Gluten Free Variation: Preheat the oven to 350-degrees. In a medium bowl, combine 1 ½ cups/213 grams gluten free flour blend, ½ teaspoon baking powder, ½ teaspoon salt, ½ teaspoon xanthan gum. In a large mixing bowl, place ½ cup softened butter, 2 Tablespoons oil, 2/3 cup packed brown sugar, 2/3 cup granulated sugar, and 1 Tablespoon honey. Beat together for a couple of minutes until the mixture is light and fluffy. Beat 1 egg into the sugar mixture and scrape the sides and beat again. Beat in 1 teaspoon vanilla and ½ cup/125 grams smooth peanut butter until the mixture is smooth. Reduce the mixer speed to low and mix in the flour until it is thoroughly combined. Stir in 1 cup chocolate chips and 1 cup peanut butter chips. Drop tablespoon-sized dough balls onto a greased or parchment lined baking sheet. Bake the cookies for 11-13 minutes or until the tops are set and the edges are turning golden. Allow the cookies to sit on the cooling racks for about 30 seconds before removing them to cooling racks to cool completely.

Step by Step Instructions

Step 1

1 cup/142 grams all-purpose flour
1 cup/142 grams whole wheat flour
1 teaspoon baking powder
1 teaspoon salt

Preheat the oven to 350-degrees. Whisk together.

Step 2

1 cup butter, slightly softened
2/3 cup packed brown sugar
¾ cup granulated sugar
2 Tablespoons honey

Beat the butter until it is creamy and beat in the sugars and honey. Continue to beat until the mixture is light and creamy.

Step 3

2 eggs
1 teaspoon vanilla extract
1 cup smooth peanut butter (like Jif)

Add eggs one at a time, scraping the bowl after each egg is incorporated, and then the vanilla and peanut butter. Beat this mixture until it is smooth. Reduce the speed to low and gradually stir in the flour mixture.

Step 4

1 cup chocolate chips
1 ½ cups peanut butter chips

Stir the chips into the dough. Drop tablespoon-sized dough balls onto baking sheet. Bake 10 minutes. Allow cookies to cool one minute on baking sheet and then remove them to cooling racks.

Step 5

Regular sized marshmallows

Fire & roasting sticks Toast a marshmallow over a nice fire and sandwich it between two cookies. Yum!
