I remember the first time I really appreciated the magic and hilarity of a Shakespearean comedy. I was fifteen and spent the night with my cousin at her cute college house while my mom attended a conference. We watched Kenneth Branagh’s Much Ado about Nothing. I was swept into this world of ochre buildings, crunching gravel courtyards, glossy green vineyards, and frothy white summer dresses. I wanted to be there with them, especially at their picnic in the opening scene.
Beatrice ate luscious purple grapes and sang “Sigh no more, ladies, sigh no more” as the brave warriors galloped toward them across the gorgeous Italian countryside. That scene elevated my idea of the ideal picnic and, though none of my picnics have yet come close to that sheer gorgeousness, the charm of eating alfresco continues to beckon me outside for dinner.

This recipe makes a fun picnic in the summertime and is an easy last-minute dinner anytime. Let kids pick their favorite cheeses, crackers, and fruit to help them get involved and interested. You are mere steps away from your own idyll, at least until the water gets spilled on the crackers, or the cat sidles through the picnic and runs off with the cheese.
Ingredients
- (10-ounce) carton hummus
- 2 tablespoons olive oil
- ¼ teaspoon coarse salt
- 1 wedge soft cheese (such as
Camembert) - 1 wedge medium cheese (such as
Gouda) - 20 slices salami
- 10 slices deli turkey
- 1 cucumber
- 1 cup grape tomatoes
- 2–3 carrots
- 2 apples or 1 bunch grapes
- 1 baguette
- 1 package water crackers
- ½ cup roasted salted almonds
- ¼ cup sour cherry jam
- ½ cup pickles of your choice
- ½ cup olives of your choice
Gluten-Free Variation: Cut 8 slices of gluten-free bread in half and toast them until the tops are just crisp and beginning to look toasty. Gently scrape the bread with a peeled garlic clove. Lightly brush with extra-virgin olive oil and sprinkle with coarse salt. Keep warm. Arrange gluten-free rice crackers on a plate to serve. Prepare and arrange all other ingredients as mentioned. Choose gluten-free cookies to end the dinner.
Step by Step Instructions
Step 1
(10-ounce) carton hummus
2 tablespoons olive oil
¼ teaspoon coarse salt
1 wedge soft cheese (such as
Camembert)
1 wedge medium cheese (such as
Gouda)
20 slices salami
10 slices deli turkey
Spoon the hummus into a bowl, drizzle with olive oil, and sprinkle with salt. Arrange the cheeses on aplate and let them sit at room temperature while you prepare everything else. Arrange salami and turkey on a plate and refrigerate.
Step 2
1 cucumber
1 cup grape tomatoes
2–3 carrots
2 apples or 1 bunch grapes
Cut the cucumber in half lengthwise, then cut each half into half-moon slices. Wash the grape tomatoes. Peel the carrots and cut into approximately 3-inch sticks. Arrange the vegetables on a plate. Slice the

Step 3
1 baguette
1 package water crackers
Cut the baguette into slanted 1-inch thick slices. Arrange the baguette slices and crackers on a plate.
Step 4
½ cup roasted salted almonds
¼ cup sour cherry jam
½ cup pickles of your choice
½ cup olives of your choice
Place almonds, jam, pickles, and olives in dishes and arrange on the table with the proteins, fruits, vegetables, bread, and crackers.
