4040 am thrilled to have made it to the end of January, which is always a pretty dark and cold month in the Pacific Northwest. We are entering February at a run, of course, since we have school and activities throughout the week. Our weekend will be a little busier with guests for dinner on Friday, a date to the symphony on Saturday, and a day of fasting on Sunday, so I have planned accordingly.
Monday: Chicken pot pie with a bonus berry pie–60 minutes–This savory pie, with a sweet little berry pie made of pastry scraps, works well when you have about an hour to spend cooking before you want to eat dinner.
Tuesday: Salmon teriyaki–20-40 minutes (depending on how you do the rice) This quick dinner makes the most of canned salmon and quick cooking methods to have dinner on the table quickly on a busy evening.
Wednesday: Tuna noodle casserole–40 minutes–This quick dinner relies on pre-cooked protein (tuna) and quick cooking noodles to be perfect for an evening when time is short.
Thursday: Clam chowder–40 minutes–a nice cozy dinner for an evening when everyone is home.
Friday: Pizza and brownie sundaes–60 minutes–This dinner is an easy one to multiply for company.
Saturday: Tofu nuggets with various dips, roasted potatoes and broccoli–40 minutes–like chicken nuggets but with tofu! The multitude of dips makes this fun and the sheet pan nature of it helps with reduced cleanup on a night when dish washing will be time-constrained.
Sunday: Spaghetti with marinara sauce–20 minutes plus slow cooker time–This dinner will cook largely on its own on a day when I do not really want to be spending time in the kitchen.
The chicken pot pie and tuna noodle casserole recipes, along with a bonus recipe for brownie sundaes will be posted here this week, so check back for some great, cozy winter food. All of the recipes will either be gluten free or easily adaptable to be gluten free.
