Monday 1/8/24—Gluten Free Glass Noodles with Eggs and Cabbage

I enjoyed a dish similar to this one on a ski trip a year ago and was determined to enjoy it again in my own kitchen! This one-dish-dinner is satisfying and healthy. It would be a great addition to your rotation for Meatless Mondays. I love trying the vast variety of gluten free noodles from Asian cuisines, and the glass or bean thread noodle is a very interesting one. Tuesday 1/9/24--Gluten Free Crockpot Tamale Pie with Roasted Cabbage

I like to plan two cabbage-using dinners in a single week. Cabbages are usually so dense and we never use an entire cabbage in one meal. This dinner is very simple. You place a couple of cans of chili of your choice in your slow cooker. Make sure the chili it is gluten free—Hormel is my go-to option. Make a batch of your favorite gluten free cornbread and spread it over the chili. Cover and cook for 2 hours on high. Slice the cabbage about 1/2-inch thick and toss with oil and salt on a half-sheet pan. Roasted at 425-degrees for about 20 minutes. Yum!

Wednesday 1/10/24--Gluten Free Fish Cakes with Tartar Sauce and Roasted Squash

I found this recipe in Madhouse Cookbook by Jo Pratt and it is a straightforward recipe great for a busy weeknight dinner. It utilizes tinned fish and cooked potatoes, so it is simply a matter of putting the ingredients together and then lightly pan frying them so they are crisp outside and warmed through. Make sure to scale the recipe to your dining needs. I serve the fish cakes with a little tartar sauce and the roasted squash with butter and salt. Yum!

Thursday 1/11/24 Gluten Free Clam Chowder, Crackers, and Salad

Saltine crackers are truly one of the holy grails of gluten free baking. I have come close but never managed to get there. I may try them again this week, depending on how my time goes. If so, I will post the recipe here on the blog. Alternatives chowder accompaniments include potato chips (actually, these are really a solid option), Frito-style chips, or your favorite gluten free cracker-that-isn’t-really-a-saltine. Friday 1/12/24 Frozen Trader Joe's Dinner

Since I am going to be eating away from my family, they will not be constrained by the same gluten free diet. Very thankfully none of them have issues with gluten! Since Trader Joes always has lots of interesting offerings, I usually choose something from their freezer cases for dinner when I am away from home.

Saturday 1/13/24 Refrigerator Dinner

We repeat this dinner every week because I like to make sure to use up the leftovers in my fridge to help prevent grocery budget and food waste. It’s always interesting to try to figure out how to repackage bits of leftover ingredients into a new dinner! If we end up not having enough leftovers I opt for pancakes.

Sunday 1/14/24 Scrambled Eggs, Gluten Free Toast, and Green Salad

There are few things as comforting as a nicely scrambled egg. Rather than spending time on the main course today I am choosing to spend time on my gluten free bread, which will be turned into wonderful gluten free toast. I have spent a lot of time figuring out my bread and am happy to share it with you. If you feel a bit of grief and envy over watching your friends eat good (i.e. not gummy and ridiculously expensive) toast, you are not alone!
