Day 1: Frito Pie with Veggies and Dip
We begin the week (New Year’s Day) with a very easy dinner: Gluten-free Frito Pie with Vegetables and Ranch Dip. It’s one of the recipes I put in the 20 Minute “Superfast” section of my cookbook, 20-40-60 Minute Dinners: Meals to Match the Time You Have. This is definitely not haute cuisine, but after a month of entertaining and cooking special dinners, it is just about right.
Day 2: Lemon Caper Salmon with Buttered Noodles and Beans
Next up is a quick salmon dinner with capers and lemons, gluten-free buttered and salted pasta (basic kid classic!), and frozen green beans cooked according to package instructions. This is one of those things I usually just kind of throw together in my kitchen with some capers, mayo, and preserved lemon, but here is a link to a recipe that you might like: 12-Minute Baked Salmon with Herbed Mayonnaise (everylastbite.com) I would use dried dill this time of year and would have to increase the amount of salmon a bit to feed my family.
Day 3: Tacos!

Day 4: Nana's Mac & Cheese with Green Peas
The fourth dinner is gluten free Nana’s Homemade Mac & Cheese with frozen peas. I grew up eating frozen peas (thawed and just heated through) with pasta all the time, so the taste works well and this vegetable is a very quick and easy side. Here is a recipe like the one I would use, but I would definitely not bake it for so long, maybe just broil it to crisp up the breadcrumbs: Easy Gluten-Free Macaroni and Cheese Recipe (allrecipes.com)
Day 5: Korean-style Beef with Rice and Kimchi
The fifth dinner is a riff on a recipe I found years ago online and I hoped I could find it again for you! It is a Korean-style beef with rice and kimchi. I am going to try it with a marinated flank steak this time, which will take a little more foresight but will be good, I think. Here’s the original: Easy Korean Beef (iheartpublix.com) Remember, in order to make this recipe gluten free, use gluten free soy sauce.
Day 6: Refrigerator Dinner
Sixth, we have a Refrigerator Dinner. We take leftovers and reimagine them into a dinner that is often interesting and always helpful to avoid food waste.
Day 7: Chicken Pot Pie with Bonus Berry Pie
The seventh dinner is on Sunday in my planning cycle. I have a bit more time on Sundays so I make a dinner that can require more time. This week we are using my gluten free Chicken Pot Pie recipe Chicken Pot Pie – Dinner in Real Time that even allows for a bonus berry pie to satisfy your sweet tooth.
