Gummy Bear Rice Crispy Cake - Dinner in Real Time

When Bear told me that he wanted to start playing Dungeons and Dragons with his friends, I really didn’t have any idea what we were getting into with the starter kit. Now, about a million (yes, hyperbole) books and characters and campaigns into it, I have come to appreciate the cultural force of Dungeons and Dragons a little more. I’ve never actually finished a campaign, but I have played it a bit. It’s fun, and it’s amazing to me that Bear can keep all of the classes and hit points and who knows what else, in his head.

So this year, when Bear was thinking about how to celebrate his 14th birthday, he decided to have a D&D game with some extra special treats. He made up a campaign and I made the treats and everyone had a lot of fun, ate a lot of sugar, and defeated the foe in the end.

This recipe for the gummy bear rice crispy cake is so simple!

Gummy Bear Rice Crispy Cake

Ingredients:

  • 6 Tablespoons butter
  • 10 ounces marshmallows
  • 6 cups crispy rice (for gluten free, use Malt-o-Meal crispy rice, not Kellogs)
  • Gummy bears (for gluten free, check the label—Albanese and Black Forest are gluten free, but Haribo is not)

Step 1:

Melt the butter over medium heat. Stir in the marshmallows and stir constantly until they melt. Remove the marshmallows from the heat and stir in the crispy rice. Stir 1 cup of gummy bears into the marshmallow mixture.

Step 2:

Generously grease a 10-12 inch springform pan. Make a pattern of gummy bears on the bottom—make sure the gummy bear faces are pointing down. Pour the marshmallow mixture over the gummy bears and gently pack it into the springform pan. Allow it to cool and set for at least 30 minutes.

Step 3: Release the pan’s clasp and place the cake on your serving plate, and you’re done!
