Dinner this week will be a variety of warming and hearty meals because we are going to get a freezing Arctic front in the Pacific Northwest. Some of the dinners will be quick and some will take a little longer to fit the time available.
Monday–Pho–I used rotisserie chicken to make this dinner, which made it quick and straightforward. This was good, but it wasn’t amazing. Still under development.
Tuesday–Garlic ginger noodles with vegetables and chicken. This dinner is in development, and I will share the recipe as soon as I get it together. I am shooting for the 20-30 minute time frame. I had this dinner at a funny little Hawaiian restaurant in a tiny town near the Washington/British Columbian border right after Christmas. Stay tuned!
Wednesday–Pasta with white clam sauce. The recipe for this is on the recipe section of this website. So yummy, and pretty quick for a busy evening!
Thursday–A little more time is available to me in the afternoon on Thursday, so I am going to make a warming potato leek soup with accompanying soda bread. This is a perfect dinner for a cold night.
Friday–Empanadas with beans and cheese. I love the crispy, cheesy, beaniness of these little hand pies. This is such a fun dinner for a Friday night!
Saturday–I don’t know if I’ve ever really had a relaxed Saturday since I had kids. They are such busy days for me! Potatoes and tinned chili with broccoli is a great option that is quick and satisfactory.
Sunday–Hawaiian haystacks is such a funny dinner. There really isn’t anything Hawaiian about it beyond the pineapple and rice, but they are good. This is a recipe from 20-40-60 Minute Dinners: Meals to Match the Time You Have.
