This week is a busy one with a birthday to attend to in addition to the regular activities. Here are our menus. What recipes would you like to see?
Monday 2/13 Chinese-style Rice and Chicken Porridge. This slow cooker dinner tastes so much better than it sounds! Toppings like crispy onions, sauteed mushrooms, quick-pickled cucumbers, and peanuts help elevate the humble chicken soup with rice to be fit for a celebration! Also, we had birthday cake.
Tuesday 2/14 Tomato Soup with Grilled Cheese Tuna Sandwiches. Happy Valentine’s Day! This evening did not slow down for us to do much special Valentine’s celebrating as sabre was on as usual at the incredibly convenient time of 6:00. Please note the dripping sarcasm!
Wednesday 2/15 English Muffin Mini Pizzas with Salad. This evening is full of activities for my three older kiddos so this quick dinner is a great option.
Thursday 2/16 French Dip Sandwiches with Chips and Green Salad. This classic is a treat for a slightly slower paced evening.
Friday 2/17 Phad Thai with Cucumber Salad and Sticky Rice. One of my favorite meals and a great way to celebrate the end of the school week.
Saturday 2/18 Creamy Lemon Chickpeas with Rice. This recipe is in the development pipeline as a 20-minute dinner, which is perfect for a Saturday.
Sunday 2/19 Chicken Sausage Gyros with Flatbread. This recipe is also in development. Look for recipe soon!
