Peeps Cookie Pie - Dinner in Real Time

Nancy D has always loved Peeps more than the rest of my kiddos. She loves to watch videos of them being made. She loves to collect stuffed models of the candy. And, of course, she loves to eat the Peeps! I actually really like them too. Marshmallow is certainly a very basic candy, but it is also such a toothsome little bite of sweetness. I certainly won’t turn my nose up at a fresh(ish) marshmallow. My favorites are the yellow ones. What about you?

This treat is a cake mix bar cookie that is baked in a pie plate and then decorated with sprinkles, frosting, and peeps. It is almost as simple a dessert as possible and it is so fun for middle aged kiddos to get to cook on their own. Ingredients:

  • 1 box confetti cake mix (gluten free is fine)
  • 2 eggs
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 1 cup chocolate chips (optional, sort of)
  • 1 can frosting
  • Food coloring
  • Sprinkles
  • Peeps!

Step 1: Preheat the oven to 350-degrees. Beat together the cake mix, eggs, butter, and vanilla, starting on a low speed until the flour is contained. Beat until smooth. Stir in the chocolate chips.

Step 2: Grease a pie plate and press the dough evenly into the pie plate. Place in the oven and bake for 25-35 minutes until the middle is not gooey. 

Step 3: Cool completely. Tint your frosting to the desired shade of green if you want it to look like grass. Decorate the pie as desired with the frosting, Peeps, and sprinkles. Enjoy!
