Spooky Monster No-Bake Cookies - Dinner in Real Time

I love a good no-bake cookie: tender and slightly crumbly, it almost feels healthy with the peanut butter and oats. No-bake cookies are easy to make into a celiac-safe treat if you make sure to use gluten free oats and peanut butter that hasn’t ever been exposed to wheat bread. Add a couple of eyes for an easy Halloween treat!

  • 1/2 cup milk/
  • 1/4 cup cocoa powder
  • 1 1/4 cup sugar
  • 1/4 cup butter

Combine in a large saucepan and place it over medium-high heat. Bring the mixture to a full, rolling boil (it keeps boiling when you stir it) and cook for one minute for soft set cookies and 1 1/2 minutes for a firmer cookie. Remove the pan from the heat.

  • 1/2 cup peanut butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Stir into the chocolate mixture until the peanut butter melts into the chocolate.

  • 3 cups old-fashioned oatmeal

Stir into the chocolate mixture until thoroughly combined. Line two baking sheets with waxed paper. Place in 2 tablespoon mounds onto the waxed paper. Place candy eyes on the mounds and allow the cookies to set completely. Serve with gummy worms for a fun Halloween effect!
