The Reality of Spring Sports Season - Dinner in Real Time

It’s baseball season now, with a little volleyball thrown in for good measure, and for these two months life feels like it is hurling downward like a peregrine falcon in a hunting dive. I never feel sure as to whether I am the falcon or the unfortunate little starling it is hunting. Taking into consideration the fact that this is also the advent of gardening season and the end of the school year with its multitudinous activities, with which I never seem to be able to decline to help, I find myself running ragged and feeling a bit like the surprised starling.

It always takes a few weeks of the craziness for me to adjust my cooking expectations and help myself out a bit, but things even out when I do. These are not days for dinners, or breakfasts or lunches for that matter, that take more than a few minutes to prepare. And, while the drive-thru is sometimes momentarily appealing, I never feel very interested in the boring and relatively expensive offerings. So, we have quick supermarket and pantry dinners. It is an added bonus if they are also portable.

Here are some of my favorite go-to options for dinner during this crazy, lovely time of the year. May you embrace your own mayhem with grace and the equanimity that comes from a good dinner.

  • Scrambled eggs, toast, pickles, and fruit
  • Custom sandwiches, chips, carrots and dip
  • Sheet pan roasted drumsticks, potatoes, broccoli and onions
  • Waffles, sauteed zucchini with tomatoes and garlic
  • Picnic bites for dinner (baguette and crackers with cheeses, salami, and hummus; grapes, cucumber, pepper, and apples; cookies)
