What is it about salmon? This king of fish, which actually does have a king variety, is “practically perfect in every way” to borrow a phrase from the peerless Mary Poppins. Salmon can be cooked simply or dressed up, and it is great either way. It is considered a good source of healthy omega-3 fatty acids, so it is good for your heart and brain. It is even brilliantly colored and so it looks beautiful when served. Yes, salmon is practically perfect, as long as it hasn’t been cooked for too long!
Fish is a great protein option for dinners that need to be fast. If you need to have dinner ready in 20-30 minutes, you should consider this salad. It’s quick and satisfying, and it’s even good for you!
Ingredients (for 6):
- 1 ½-2 pounds salmon
- ½ cup mayonnaise
- 1 teaspoon siracha
- 1 Tablespoon brown sugar
- ¼ teaspoon salt
- 2 hearts of romaine, washed and torn (approximately 7-8 cups)
- 1 ½ cups croutons
- 3 medium tomatoes, cut into wedges
- 1 small cucumber, halved lengthwise then sliced
- Honey mustard salad dressing OR
- ½ cup oil
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons mustard
- ¼ cup honey
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon garlic powder
Preheat the oven to 425-degrees. Place the salmon on a roasting rack. Whisk together the mayonnaise, siracha, brown sugar and salt. Spread the mixture on the salmon Roast for about 15 minutes. Check to see if the salmon feels firm in the middle. If it is not, return to the oven for an additional 5 minutes. If your salmon is still a bit frozen (as mine often is), it will take longer to heat through the center.
While the salmon is roasting, wash and tear the lettuce, cut up the tomatoes and cucumber, and make the dressing if you are making your own. To serve, place the lettuce on the plate, add a handful of croutons, a portion of salmon, tomatoes, and cucumbers. Drizzle with dressing and enjoy!
