I remember really enjoying the days when Mom planned a frozen lasagna and green pea dinner for our family when she was going to be away at dinnertime. Those lasagnas always hit the spot at the end of a busy day, and they were realistic options for Mom to serve on a night when she was going to be out.
While some people may look down their noses at freezer section dinners, I am all for using all available resources on a busy, and, therefore potentially stressful, evening. This is one of my kiddos’ favorite freezer section dinner options.
- 2 bags frozen orange chicken
- 1 bag frozen vegetable stir fry
- 4 cups prepared rice
I start the rice first if I am cooking my own from scratch. Then I preheat the oven and get the orange chicken going, according to package instructions. I make the stir fry according to package instructions and then have my family dish up dinner while I am away.
If you are lucky enough to live near a Trader Joe’s, you are definitely in luck with the freezer section options, but many grocery stores have lots of great options.
